Maybe most of you are not in the mood for salads yet, so here’s a warm salad I came up with when I was craving one!
One bunch of beets, stems cut off and saved. Wash and wrap in in foil. Bake at 350 degrees for about 1 hr. Let cool, peel and chop. Or- Wrap in foil with olive oil, salt and pepper. Grill for about 20 minutes.
One red bell pepper chopped, one bunch of kale chopped, one red onion chopped, green tops of beets chopped.
Saute all these veggies to your liking with a little olive oil, salt and pepper.
Mix in beets, top with crumbled goat cheese and pepita seeds (pumpkin seeds that have been shelled).
Slice fresh ciabatta bread, rub with fresh garlic and sprinkle with parmesan cheese. Toast in the oven for a few minutes and serve with the salad. Restaurant gourmet salad at home! Yum! xo
