The Full Flower Moon reaches its peak on Friday, May 5th at 1:36pm, but you can enjoy it Thursday evening and Friday evening. This moon is also referred to as the Budding Moon, Leaf Budding Moon, and Planting Moon because, if you’re like me, you are sooooo excited to plant and see the buds on trees!!! With it being May comes MAYHEM!!!! This month my boys will both be transitioning to new schools . . . yep, somehow I am old enough to have a middle schooler and a high schooler!!!! I waiver between excited to scared to nervous to crying to bursting with pride. I’m sure many of you are having these emotions this month with all kinds of graduations, end of school, Mother’s Day, the beginning of wedding season and so much more! It’s why I’ve always called it MAYHEM MAY! It’s the time of year when we think “how many things can we squeeze in to 31 days????” Good news! Certified pilates instructor, Jen Duffley, began her fitness journey at a very young age. A former competitive gymnast and coach, Jen was trained to work diligently, developing a sense of confidence, and an eye for form and technique. This, she believes, is the foundation to achieving the best results with any activity. Incorporating patience and a calming mind-set, Jen encourages her clients to accomplish the ultimate: core strength and balance. I realized I didn’t share any food recommendations last month and I know we are all soooooo busy this month so here’s an easy recipe for any night of the week/ bring this to your next pot luck salad! Sara’s Quick Quinoa 1c quinoa 1 can of garbanzo beans, strained and rinsed 1 container of grape tomatoes- halved 1 cucumber, chopped 1 bunch of kale, deveined, chopped OR 1 bunch of spinach 1 can of corn, strained 1-2 avocados 1 container of feta- you wont need all of it Dressing-Olive oil, salt, pepper, 1 clove garlic, small handful of chopped cilantro, juice 1 lime Cook quinoa in 2c of water 12 min or as directed. While cooking quinoa, saute kale until desired doneness. Using a large mixing bowl, mix together quinoa, beans, tomatoes, cucumber, kale/spinach, corn. In a small bowl, mix together about 1/4c of olive oil, salt, pepper, smashed/ minced garlic, chopped cilantro, and the juice of 1 lime. Pour over salad and mix. Top with chopped avocados and feta. |
