Quick Overnight Oatmeal

I am one of those people who MUST eat breakfast first thing in the morning.  We have a very busy morning so sometimes this can be difficult.  A few years ago I found a recipe for overnight oatmeal and since then, this has been my breakfast 6 mornings a week- Sundays I switch it up!

I use 6 jelly jars, fill each about half full with old fashioned oats.  Stir in your favorite fruit- dried fruit is easiest (raisins, craisins, dates), but in the summer I’ll use blueberries or strawberries.  I also mix in about a tablespoon of Chia seeds, chopped walnuts or almonds, and a few shakes of cinnamon.  I fill the jar almost to the top with almond milk.  Stir the mixture, place the lid on top, and refrigerate.  Each morning I grap one, remove the top and microwave for about 45 sec- 1 min and I’m off!  Since I make 6 on Sunday night, they all taste fine by day 6, but I would say 7-10 days for expiration on this.
