It’s that time when we start harvesting our veggies! Try this quinoa salad which is a staple at our house and uses our own vine ripe grape tomatoes, kale, and cucumbers!
Cook 1c quinoa with 2c water as directed.
Devein, chop, and saute 1 bunch of kale
In a bowl combine :
1 can of garbanzo beans or any bean to your liking
About 1-2c of grape tomatoes, halved
1 cucumber, chopped
In another small bowl, combine the juice of 1 line, about ½ c olive oil, ½ a bunch of cilantro chopped, salt, pepper, 2 cloves of garlic. Whisk together and pour over the salad. Mix together and spoon in to low bowls. Top with chopped avocado, pine nuts, and even feta!
