Kale and Red Beet Salad Peel 2-3 red beets, halve them, season with olive oil, salt and pepper. Wrap in tin foil and place on the grill for about 30 min or until done. Slice 1 red onion and sauté in a pan with olive oil, salt and pepper for about 10-15 min. While cooking, devein and chop the beet green tops and one bunch of kale and add to the onions and a little more oil if needed. Cook for another 10-15 min. Place onions and kale on 2-4 plates. Chop cooked beets and place on top of the kale and onions. Sprinkle goat cheese, pepita seeds, and drizzle with the balsamic vinegar and serve with a side of crusty bread |
