The Chinese New Year Celebration of the Year of the Dragon will wrap up tomorrow! To celebrate, enjoy this super easy and super yummy and healthy dinner! My Ramen and Potstickers!
Ramen
400 g/14oz coconut milk
2 cups /500ml chicken or vegetable broth
2 tsp lime zest (1 lime)
8oz Udon Noodles/ whatever noodles you prefer
1 red bell pepper, thinly sliced
3-4 carrots, cut like matchsticks
1 Bokchoy- thinly sliced and halved
1 container of shiitake mushrooms
OR any other veggies you like!
Warm the broth and add in the mushrooms and bok choy, boil and cook ramen noodles to your liking
To serve: Place noodles in bowl, top with veggies, then top with broth. Can add a bit of chopped cilantro and siracha to your liking!
Potstickers
1 package of wonton wrappers
1 package of ground pork- optional
1/2 the carton of shitake muscrooms- finely chopped
2-3 slices purple cabbage- finely chopped
2 scallions- finely chopped
Season the pork with salt and pepper and cook until there is no pink. Set aside.
Saute all the veggies with olive oil, salt, pepper, 1 clove of smashed garlic, and a bit of fresh grated ginger if you have it.
Fill each wonton wrapper with veggies, pork, or both! Use a bit of water to seal the wrapper edges together.
Gently place each in a pan and fry until golden brown. My family likes the potstickers with just a bit of soy sauce.
