Happy Full Snow Moon

The Snow Wolf Moon will be at its peak on Saturday, February 24th at 5:30am MTS. The name “the snow moon” is pretty straight forward as February is usually the snowiest month, although that’s always up for debate in Denver . . . . this moon is also known as the Boney Moon or Hungry Moon by the Cherokee people as food was much harder to come by in the dead of winter.

You may notice that the moon looks much farther away than other full moons as this month is a micro moon- think opposite of super moon. Because the moon moves in an elliptical pattern, this one happens to be about 252,225 miles away from Earth!

February is a special month for me as it’s my birthday month and Valentine’s Day is my favorite holiday.

I know- cheesy and controversial/ annoying for many, but the reason it’s my favorite holiday is that my family has a tradition of sending each other cards. and texts. Not extravagant gifts or cards, but just simple cards to say I love you and I’m thinking of you.

I think it’s a great time to remind those you love that you are here for them and a great time to love yourself through some sort of self care!!!!

More fun information about February . . . . February comes from the Latin “Februa” which means “purification”. Full Spring Detox Starter Kit
Spring Detox Tea

The Chinese New Year Celebration of the Year of the Dragon will wrap up tomorrow! To celebrate, enjoy this super easy and super yummy and healthy dinner! My Ramen and Potstickers!

Ramen

400 g/14oz coconut milk

2 cups /500ml chicken or vegetable broth

2 tsp lime zest (1 lime)

8oz Udon Noodles/ whatever noodles you prefer

1 red bell pepper, thinly sliced

3-4 carrots, cut like matchsticks

1 Bokchoy- thinly sliced and halved

1 container of shiitake mushrooms

OR any other veggies you like!

Warm the broth and add in the mushrooms and bok choy, boil and cook ramen noodles to your liking

To serve: Place noodles in bowl, top with veggies, then top with broth. Can add a bit of chopped cilantro and siracha to your liking!

Potstickers

1 package of wonton wrappers

1 package of ground pork- optional

1/2 the carton of shitake muscrooms- finely chopped

2-3 slices purple cabbage- finely chopped

2 scallions- finely chopped

Season the pork with salt and pepper and cook until there is no pink. Set aside.

Saute all the veggies with olive oil, salt, pepper, 1 clove of smashed garlic, and a bit of fresh grated ginger if you have it.

Fill each wonton wrapper with veggies, pork, or both! Use a bit of water to seal the wrapper edges together.

Gently place each in a pan and fry until golden brown. My family likes the potstickers with just a bit of soy sauce.

My studies included Swedish and Thai massage, trigger point release, injury rehab, postural analysis, sports massage, hot stone massage, pregnancy massage, lymphatic drainage, myofascial release, reflexology, and reiki.
